Vegetarian Chili

  1. Have all ingredients ready.
  2. I mix all spices together in a small bowl ahead of time.
  3. In a large pot, heat the olive oil over high heat, add onions, celery, green peppers, carrots, garlic, mushrooms, spices, salt and pepper.
  4. Cook stirring for 1 or 2 minutes.
  5. Add remaining ingredients and bring to a boil, stirring.
  6. Reduce heat and simmer for 20-30 minutes uncovered.
  7. If too thick, chili can be thinned with tomato juice.
