Apple Cinnamon Syrup Pie Recipe
- 1 c. Knotts Berry Farm Light Apple Cinnamon Syrup
- 1 c. Warm water
- 1 tsp Butter
- 3 Tbsp. Cornstarch
- 1 pch Salt
- 2 x Egg yolks
- 1 x Graham cracker pie crust
- 2 x Egg whites
- 1 Tbsp. Knotts Berry Farm Light Apple Cinnamon Syrup
- Combine syrup, warm water and butter and bring to a boil.
- Mix cornstarch, salt and sufficient cool water to make a thin paste, add in egg yolks and beat well.
- Add in cornstarch mix to warm syrup gradually, return to heat and cook till thickened to the consistency of pudding, stirring constantly.
- Cold slightly.
- Pour into pie crust.
- Beat egg whites stiff, adding slowly the Tbsp.
- of syrup.
- Pile on pie and brown in 400 F oven.
- Notes: The filling never thickened sufficient.
- Anything less than pudding consistency just doesn't work.
- Now, here is something Neil and I tried last night.
- It tastes something like apple pancakes to me... We still need to get the consistency of the filling right, but I think it may just be a matter of more corn starch.
