Almond Coconut Cranberry Cookies
- 1/2 cup sugar
- 1 cup brown sugar
- 2 stick butter, softened
- 2 eggs
- 1 tsp almond extract (I add a bit extra)
- 1 tsp vanilla extract (I add extra)
- 1 tsp baking soda
- 1 1/2 cup flour
- 1 tsp cinnamon
- 1 cup raisins
- 1 cup dried cranberries
- 1 cup flaked baking coconut
- 3 cup oats, regular or quick cook
- 1 cup slivered almonds, toasted (toast for approximately 10 minutes in a 350 oven)
- Preheat oven to 350.
- In a mixing bowl, cream together the butter and sugars until fluffy.
- Add the eggs and the extracts and beat well.
- Add the flour, baking soda, cinnamon and oats and mix.
- Fold in the rest of the ingredients and stir until blended.
- Drop by the tablespoon onto ungreased cookie sheets and bake for 14 to 16 minutes.
