Confetti Wild Rice

  1. Bring 1 cup (225 ml) olive oil with 1/2 cup (125 ml) annatto seeds to almost a boil.
  2. Simmer 5 minutes.
  3. Strain oil and cool.
  4. Refrigerate.
  5. Use about 1 tsp (5 ml) to 2 tsp (10 ml) in rice dishes.
  6. Saute onions and peppers till soft but not browned.
  7. Stir in raw rice and cook a few minutes.
  8. Add the stock and annatto oil and bring to a boil.
  9. Cover and simmer until rice is tender.
  10. Let rest off the heat 5 minutes.
  11. Fluff with fork.
  12. Season to taste.
  13. Stir in thawed green peas.
