Beans (Oklahoma Style) Recipe
- 2 c. dry pinto beans
- 1 c. minced onion
- 1/4 pound salt pork, diced
- 1 clove garlic, minced
- 2 teaspoon salt
- Tabasco to taste
- 2 (1 lb.) cans stewed tomatoes
- 3/4 c. minced green peppers
- 1 tbsp. sugar
- Dash black pepper
- Soak beans overnight covered with water.
- Don't drain.
- Add in onion, salt pork, garlic and salt.
- Cover and simmer 2 hrs over low heat.
- Add in tomatoes, green pepper, Tabasco, sugar and black pepper.
- Cover and cook about 3 more hrs or possibly till tender.
- Serve with cornbread.
- Yummy.
