Cajeta Sweet Potato Pie Recipe
- 2 c. mashed sweet potatoes
- 1/3 c. sugar
- 1 pch salt
- 1 Tbsp. grated orange rind
- 1 Tbsp. Tabasco brand Pepper Sauce
- 1/2 c. whole lowfat milk
- 1/4 x Cajeta caramel
- 1 Tbsp. brandy
- 2 lrg Large eggs
- 2 c. all-purpose flour
- 1/2 tsp salt
- 1 1/2 stk sweet butter
- 3 Tbsp. margarine
- 1/4 c. ice water
- To make pie shell, blend flour and 1 tsp.
- salt.
- Cut butter and margarine into flour.
- Add in water.
- Hold together and refrigerate1 hour.
- Roll out onto pie plate.
- To make sweet potato filling, mix sweet potatoes, sugar, salt, orange rind, Tabasco brand Pepper Sauce, lowfat milk, caramel, brandy and Large eggs.
- Mix well.
- Pour into an unbaked pie shell.
- Bake at 375 degrees for 50 min.
- This recipe yields 12 servings.
