Scrambled Egg Burrito
- 8 eggs, beaten
- 1 tbsp vegetable oil
- 1/2 cup tomatoes, chopped
- 1/4 cup onion, chopped
- 1/2 tsp garlic, minced
- 1/2 jalapeno pepper, minced
- 1 cup cheddar cheese, shredded
- 1/2 cup sour cream
- 6 tortillas, flour, 8 inch
- Saute the tomatoes, onion, jalapeno, and garlic in the vegetable oil.
- Add eggs and scramble the eggs in the vegetable mixture.
- Once scrambled, put 1/2 cup of the mix into the center of a tortilla.
- Put cheese and sour cream on top, and wrap the mixture in the tortilla.
