Livi's Triple Berry Pie

  1. Combine the berries with a 1/4 cup of the sugar and let stand over a sieve for a half hour to drain some of the liquid.
  2. Preheat oven to 400.
  3. In a large mixing bowl, combine the remaining sugars, cornstarch, cinnamon, salt and orange zest, add fruit and stir to combine well.
  4. Using a 9 inch pie plate, arrange your crust and spoon the filling inches Place the second crust over and crimp edges.
  5. Make sure to cut vents into the dough, or do a lattice crust (which looks gorgeous).
  6. Brush the top of the pie with a mix of one egg yolk and a teaspoon of ice water, sprinkle with sugar.
  7. Bake for 20 minutes at 400, then lower temperature to 350 for another 40-50 minutes.
  8. Remove when crust is golden brown.
  9. Serve warm or cold with vanilla ice cream.
