Livi's Triple Berry Pie
- 1 double crust pie crust (your favorite recipe for top and bottom crusts)
- 4 cups frozen strawberries, thawed and halved
- 2 cups frozen blackberries, thawed
- 1 12 cups frozen blueberries, thawed
- 12 cup brown sugar
- 12 cup granulated sugar
- 14 cup cornstarch
- 1 teaspoon cinnamon
- 14 teaspoon salt
- 1 orange, zest of
- Combine the berries with a 1/4 cup of the sugar and let stand over a sieve for a half hour to drain some of the liquid.
- Preheat oven to 400.
- In a large mixing bowl, combine the remaining sugars, cornstarch, cinnamon, salt and orange zest, add fruit and stir to combine well.
- Using a 9 inch pie plate, arrange your crust and spoon the filling inches Place the second crust over and crimp edges.
- Make sure to cut vents into the dough, or do a lattice crust (which looks gorgeous).
- Brush the top of the pie with a mix of one egg yolk and a teaspoon of ice water, sprinkle with sugar.
- Bake for 20 minutes at 400, then lower temperature to 350 for another 40-50 minutes.
- Remove when crust is golden brown.
- Serve warm or cold with vanilla ice cream.
