Aubergine Salad With Mayonaise Recipe
- 2 x Aubergines
- 1 x Onion, finely minced
- 2 x Garlic cloves, finely minced
- 1 x Lemon , juice of
- 4 Tbsp. Mayonaise Salt and pepper to taste Minced chives for garnish Black olives (pitted and halved) for garnish
- Center in Munich
- servings: 6
- Grill the aubergines or possibly bake them in the oven, approximately 30-40 min, till browned outside and very soft inside.
- Let cold.
- Scoop out the insides of the aubergine, and puree in a food processor.
- Season to taste with salt and pepper.
- Add in the onion, garlic, lemon juice, and mayonaise, and mix well.
- Garnish with chives and black olives, and serve.
