Aubergine Salad With Mayonaise Recipe

  3. Grill the aubergines or possibly bake them in the oven, approximately 30-40 min, till browned outside and very soft inside.
  4. Let cold.
  5. Scoop out the insides of the aubergine, and puree in a food processor.
  6. Season to taste with salt and pepper.
  7. Add in the onion, garlic, lemon juice, and mayonaise, and mix well.
  8. Garnish with chives and black olives, and serve.
