Cider-Glazed Stuffed Chicken
- 1 pkg. (120 g) Stove Top Stuffing Mix for Chicken
- 1-1/2 cups apple cider, divided
- 1/4 cup non-hydrogenated margarine, divided
- 1 stalk celery, finely chopped
- 2 apples, peeled, chopped and divided
- 8 small boneless skinless chicken breasts (2 lb./900 g), pounded to 1/4-inch thickness
- 1/4 tsp. paprika
- 3 Tbsp. brown sugar
- Heat oven to 350 degrees F.
- Combine stuffing mix, 1 cup cider and 1 Tbsp.
- margarine in microwaveable bowl; cover with waxed paper.
- Microwave on HIGH 5 to 6 min.
- or until heated through.
- Fluff with fork.
- Add celery and half the apples; mix lightly.
- Place chicken, top-sides down, on cutting board; spread with stuffing.
- Roll up, starting at one short end of each breast.
- Place, seam sides down, in 13x9-inch baking dish sprayed with cooking spray.
- Melt 1 Tbsp.
- of the remaining margarine; mix with paprika.
- Brush onto chicken.
- Bake 50 min.
- or until chicken is done (170 degrees F).
- Transfer chicken to platter; cover to keep warm.
- Melt 1 Tbsp.
- of the remaining margarine in medium skillet on medium-high heat.
- Add sugar, remaining cider and apples; cook 5 to 6 min.
- or until thickened, stirring frequently.
- Remove from heat; stir in remaining margarine until melted.
- Pour over chicken.
