Slow Cooker Chili Cook-Off Chili
- 16 slices bacon
- 1 lb ground turkey
- 3 diced chipotle chiles in adobo (add more if you like a kick, less if you don't)
- 1 large sweet onion, chopped
- 3 garlic cloves, minced
- 1 (15 ounce) can kidney beans (rinsed and drained)
- 1 (15 ounce) can black beans (rinsed and drained)
- 1 (15 ounce) can cannellini beans (rinsed and drained)
- 1 cup frozen corn
- 2 teaspoons dried basil
- 1 tablespoon sage
- 2 tablespoons Worcestershire sauce
- 1 tablespoon packed brown sugar
- salt and pepper
- Pan fry bacon (not too crispy!

- Lay bacon out on paper towels to absorb fat.
- Cook ground turkey in bacon fat until no longer pink
- Remove cooked turkey from pan with slotted spoon and put in slow cooker.
- Cut bacon into 1" sections and add to turkey in slow cooker.
- Add onion, garlic, chipotle pepper and adobo sauce to bacon and turkey fat and cook until onion is almost transparent (still has some crunch).
- Add onion mixture to slow cooker and mix.
- Add beans to slow cooker and mix.
- Cook chili for 4 hours on high or 7 hours on low.
- 1 hour before finished add corn, Worcestershire sauce, brown sugar and spices to chili.
- Serve warm with your favorite cornbread!
