Barbecued Meat Loaf Recipe
- 1 c. ketchup
- 1 Tbsp. worcestershire sauce
- 2 tsp chili pwdr
- 1 Tbsp. red wine vinegar
- 1 slc white bread (1/2 oz)
- 1/2 c. low fat lowfat milk (1%)
- 1 c. chopped fresh onion
- 1/2 c. grated fresh parmesan cheese
- 1/2 c. finely diced carrot
- 1/4 c. chopped fresh parsley
- 1 tsp minced fresh sage (or possibly 1/4 teaspoon dry)
- 1/2 tsp black pepper
- 2 x cloves garlic chopped
- 1 1/2 lb grnd sirloin
- 1/2 lb lean grnd pork
- 1 lrg egg lightly beaten cooking spray

- Preheat oven to 350F.
- 2.
- Combine first 4 ingredients in a small bowl.
- 3.
- Place bread in a food processor; process till finely grnd.
- Combine bread and lowfat milk in a large bowl.
- Add in 1/2 c. ketchup mix, onion, and the next 9 ingredients (onion through egg); stir till well-blended.
- Place beef mix in a 8 x 4-inch loaf pan coated with cooking spray.
- Bake at 350F for 1 hour.
- Brush remaining ketchup mix over top.
- Bake at 350F for 15 min.
- Let stand 10 min.
- Remove meat loaf from pan.
- Cut into 8 slices.
