Garlic Shrimp, Yucatecan Style

  1. Put the oil in a skillet large enough to hold the shrimp and turn the heat to medium.
  2. Add the garlic and cook, stirring occasionally, until it turns brown and crisp, about 10 minutes; do not burn.
  3. Sprinkle with salt and remove.
  4. Raise the heat to high and add the shrimp, along with a sprinkling of salt and pepper.
  5. Cook, turning once or twice, until pink and firm, about 5 minutes.
  6. Put the shrimp and oil on a platter and garnish with the garlic, tomatoes, and cilantro.
  7. Serve hot.
