Jamie's Macaroni Salad
- 1 (8 ounce) package salad macaroni
- 12 onion
- 2 stalks celery
- 1 (8 ounce) can water chestnuts
- 1 (6 ounce) cansliced black olives
- 12 cup cucumber, chips
- 6 ounces cheddar cheese (I like Sharp)
- 12 cup mayonnaise (to taste)
- 2 tablespoons seafood cocktail sauce
- shrimp (optional) or chicken (optional) or ham, to make a meal (optional)
- Boil water add macaroni; cook till just done.
- Drain and run cold water over macaroni.
- Chop into small pieces the:onion, celery, water chestnuts, cucumber chips and drain olives.
- Cut cheddar cheese into little squares.
- Add cooled drained macaroni to large bowl.
- Add veggies and cheese.
- Add mayo and chili sauce.
- Mix well and more mayo if needed.
- Salt & pepper.
- Mix well and chill.
