Southwestern Stir-Fry

  1. In a medium bowl, combine juices, chili powder, oregano, garlic and cornstarch.
  2. Add sliced round staed.
  3. Mix well and marinate, refrigerated, for 1 to 2 hours, Drain, reserving liquid.
  4. Head half of oil in a wok or large skillet.
  5. Add onion and peppers.
  6. Stir-fry until vegetables are tender-crisp.
  7. Remove and keep warm.
  8. Add remaining oil then stir-fry beef mixture until just browned.
  9. Stir in kidney beans, corn, tomato wedges, reserved vegetables and reserved marinade.
  10. Stire gently until warmed through and sauce is slightly thickened.
  11. Serve garnished with chopped cilantro.
  12. You can also use skinless, boneless chicken breast in place of the round steak.
