Fajita Corn Salsa with Black Beans
- 1 bunch Green Onion
- 1 bunch Fresh Cilantro
- 3 whole Peppers (1 Red, 1 Green, 1 Yellow)
- 4 whole Roma Tomatoes
- 1 can (15 Oz. Can) Sweet Yellow Corn
- 1 can (15 Oz. Can) White Corn, Shoepeg If You Have It
- 1 can (15 Oz. Can) Black Beans
- 1 package (about 1 Oz. Packet) McCormick Fajita Seasoning
- 1/2 teaspoons Cumin
- 1/2 cups Olive Oil
- 1/2 cups Red Wine Vinegar
- Finely chop green onion and cilantro, add to a large bowl.
- Dice peppers, de-seeded tomatoes and add to the same bowl.
- Drain and rinse canned corn and beans and add to the bowl.
- Add fajita seasoning, cumin, oil and vinegar and stir.
- Stick in the fridge for 30 minutes or until cold.
- Serve cold with blue corn chips, or regular chips.
- Enjoy.
