Swedish Souffle from Good Housekeeping's book of Menus, Recipes and Household Discoveries-1922
- 5 Eggs
- 2 cup milk
- 2 tbsp butter
- 2 tbsp flour
- 1 tsp sugar
- 1/4 tsp pepper
- 2 cup leftover vegetables, meat, fish or cereal
- 2 tsp salt if salty leftover is used, less salt will be needed.
- Melt the butter, add the flour, and stir until smooth; add the milk and stir until it thickens.
- Butter a baking dish and place the leftover in the bottom.
- Beat the eggs until light.
- Add sugar, salt and pepper
- Pour the white sauce over the eggs which have been beaten light.
- Stir together and pour the mixture over the leftover.
- Bake one hour in an oven which registers 325 to 350 F.
