Lighter Shrimp Fettucini Alfredo

  1. Cook pasta according to directions.
  2. Drain pasta reserving 1/4 cup cooking liquid.
  3. Combine shrimp, onions and garlic in a small bowl.
  4. Heat a large skillet and add olive oil.
  5. Add shrimp mixture and saute for 4 minutes or until shrimp are done.
  6. Remove from pan.
  7. Reduce heat slightly.
  8. Add reserved cooking liquid, Parmigiano-Reggiano, cream, cream cheese and pepper to pan.
  9. Cook for 2 minutes until cheeses melt.
  10. Combine pasta, cheese mixture and shrimp mixture and serve.
