Cookies To Live For
- 1 c. enriched flour
- 1 stick butter
- 1/2 c. plus 1 Tbsp. sugar
- 2 eggs
- 2 Tbsp. milk
- 1/2 tsp. vanilla
- 3/4 c. chopped dates
- 3/4 c. chopped walnuts
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 c. flour
- 1/2 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1/4 c. butter or margarine
- 1 Tbsp. milk
- 2 tsp. freshly grated lemon peel
- 1 tsp. vanilla extract
- Mix flour, sugar, salt and baking soda in a medium size bowl. Cut butter with pastry blender or 2 knives, until mixture resembles fine crumbs.
- Add milk, lemon peel and vanilla; stir with a fork until moistened.
- Gather dough; press into a ball, then shape into a 7 x 2 x 12-inch rectangle.
- Wrap and refrigerate at least 1 hour, until firm.
