White Chocolate Strawberry Cheesecake
- 1 ready to use chocolate crumb crust
- 2 pkg. (8 oz. each) cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 4 squares white chocolate
- 1-1/2 tbsp. orange liqueur
- orange juice
- 3 cups whole strawberries
- 1/2 cup red currant jelly, melted
- Preheat oven to 180C / 350F.
- In a large bowl, mix cream cheese and sugar with electric mixer until smooth.
- Add eggs, one at a time, and mix until just blended.
- Melt chocolate squares with orange liqueur; cool and fold into prepared batter.
- Pour batter into chocolate crumb crust.
- Bake for 30 minutes or until centre is almost set.
- Cool to room temperature.
- Refrigerate 3 hours or overnight.
- Garnish with whole strawberries and drizzle with melted jelly.
