Strawberry Cheese Parfaits

• 1 (8 ounce) carton cottage cheese, sieved
• 1 egg white
• 1 cup whipping cream, whipped
• 12 teaspoon salt
• 1 teaspoon vanilla
• 2 tablespoons sugar
• 1 (16 ounce) package frozen strawberries, thawed

1. Beat egg white until soft peaks are formed.
2. Blend with cottage cheese, whipped cream, salt, vanilla, and sugar.
3. In parfait gasses, alternate spoonfuls of cheese mixture with strawberries; freeze.
4. Remove from freezer 20 minutes before serving.
