Sweet Potato Latkes

  1. Microwave potatoes and onions in large microwaveable bowl on HIGH 4 to 5 min.
  2. or until potatoes are softened; cool slightly.
  3. Combine flour and baking powder.
  4. Add to potatoes along with the onions, eggs and dressing; mix well.
  5. Heat oil in large nonstick skillet on medium-high heat.
  6. Working in batches, spoon about 1 Tbsp.
  7. potato mixture into skillet; flatten with back of spatula.
  8. Cook on medium heat 1-1/2 to 2 min.
  9. on each side or until golden brown.
  10. Drain on paper towels.
  11. Serve latkes topped with salmon.
