Greek style chicken

  1. Set oven to 180 C / 360F Drizzle a roasting dish or casserole with olive oil
  2. Thinly slice onion & scatter into dish
  3. Cut potatoes into 2 inch chunks and place in dish ( you can parboil for 5-10 minutes if you want)
  4. Arrange chicken in dish.
  5. Drain beans and add to dish along with the oregano, drop bayleaves on top
  6. Spinkle with sugar and seasoning,
  7. Pour tomatoes over everything
  8. Place in oven and cook , uncovered, for approximately 1 hour until chicken and potatoes are cooked through.
  9. Immediately before serving remove & discard bay leaves, give a gentle stir,.
  10. Sprinkle lemon juice over top
  11. Serve with focaccia or other crusty bread to soak up sauce
  12. You can add a chicken boullion cube at step 7 ,for extra flavour
  13. Can also be made with lamb chops or cutlets
  14. You can use tinned potatoes at step 3
  15. You can add a handful of black olives just before serving.
