Mediterranean Orzo Salad
- 1 Orzo pasta
- 1/4 cup Mediterranean flavored feta cheese
- 2 cup Arugula spinach mix
- 10 10 sliced olives of your choice. ( I used Greek)
- 1 Several sun-dried tomatoes cut into pieces
- 2 tsp Capers
- 1 cup Of an oil based salad dressing. ( I have used Mediterranean, but this time I used Greek dressing)
- Bring a stock pot of water to boil.
- Cook the orzo pasta approximately seven minutes or until done.
- Drain and rinse with very cold water.
- Next combine all ingredients mix well and refrigerate until ready to serve.
- This salad is Best served cold.
