Wong's Chef Salad
- 4 cups iceberg lettuce, chopped
- 4 cups romaine lettuce, chopped
- 1 carrot, sliced long and dropped into ice water for curls
- 1 small green pepper, julienned
- 1 red onion, sliced into rings
- 2 scallions, julienned
- 1 pint cherry tomatoes, halved
- 1 cucumber, sliced (if it's waxy just peel the skin off)
- 13 lb swiss cheese, julienned
- 13 lb cheese, American or 13 lb cheddar cheese, julienned
- 13 lb roast beef, thinly sliced and rolled
- 13 lb ham, thinly sliced and rolled
- 13 lb turkey, thinly sliced and rolled
- 6 hard-cooked eggs, sliced
- 1 cup salad dressing (Russian or 1,000 Isalnd dressing was traditional)
- Toss the lettuces together and put into a big bowl.
- Mix in the tomatoes and toss gently.
- Arrange the rest of ingredients on top of the salad and pass the dressing.
