MOLDS SAUCE SAFFRON -LEMON
- 10 shrumps
- 1 shallot
- 100 ml dry white wine
- 400 ml water
- 300 ml fresh cream
- 10 leaves celery
- 1 shives
- 1 coriander powder
- 1 pinch of curry
- 3 grams saffron
- 30 grams flour
- FOR the sauce cream: cut the shrumps in pieces and put in a pan with heads!!
- Add shallot, celery shopped, white wine, water, a pinch of curry and cook 20mn.
- Put a lid and infuse 10mn.
- Separate the juice with a sieve.
- Add in juice fresh cream, salt, Black pepper, coriander, lemon zest (no lemon juice ) the saffron and finally the flour: mix!!
- And cook 15 - 20mn , stir often ...
- Wash the molds, put in a large pan, add lemon pieces, Leaves of celery, shallot and add all over warm water.
- Cook 30mn.
- Serve warm With shives shopped!
