MOLDS SAUCE SAFFRON -LEMON

  1. FOR the sauce cream: cut the shrumps in pieces and put in a pan with heads!!
  2. Add shallot, celery shopped, white wine, water, a pinch of curry and cook 20mn.
  3. Put a lid and infuse 10mn.
  4. Separate the juice with a sieve.
  5. Add in juice fresh cream, salt, Black pepper, coriander, lemon zest (no lemon juice ) the saffron and finally the flour: mix!!
  6. And cook 15 - 20mn , stir often ...
  7. Wash the molds, put in a large pan, add lemon pieces, Leaves of celery, shallot and add all over warm water.
  8. Cook 30mn.
  9. Serve warm With shives shopped!
