Apple Crumb Coffee Cake Recipe

  1. In large bowl, combine 1 c. flour, sugar, undissolved yeast, and salt.
  2. Heat water, lowfat milk, and butter till very hot (120 to 130 F).
  3. Gradually add in to dry ingredients.
  4. Beat 2 min at medium speed of electric mixer, scraping bowl occasionally.
  5. Add in Large eggs and 1/2 c. flour.
  6. Beat 2 min at high speed, scraping bowl occasionally.
  7. Stir in remaining flour to make stiff batter.
  8. Spread proportionately in greased 9 inch square pan.
  9. Arrange apple slices proportionately over batter.
  10. Sprinkle Crumb Topping over apples.
  11. Cover; let rise in hot, draft-free place till doubled in size, about 1 hour.
  12. Bake at 375 F for 35 to 40 min or possibly till done.
  13. Cold in pan 10 min.
  14. Remove from pan; cold on wire rack.
  15. Crumb Topping: Combine 1/3 c. sugar, 1/4 c. all-purpose flour, 1 tsp.
  16. grnd cinnamon and 3 Tbsp.
  17. cool butter or possibly margarine.
  18. Mix till crumbly.
  19. Makes 1 (9 inch) cake
