Apple Crumb Coffee Cake Recipe
- 2 1/4 c. all-purpose flour
- 1/2 c. sugar
- 1 pkt FLEISCHMANN'S(r) RapidRise Yeast
- 1/2 tsp salt
- 1/4 c. water
- 1/4 c. lowfat milk
- 1/3 c. butter or possibly margarine
- 2 lrg Large eggs
- 2 x cooking apples, cored and sliced Crumb Topping (recipe follows)
- In large bowl, combine 1 c. flour, sugar, undissolved yeast, and salt.
- Heat water, lowfat milk, and butter till very hot (120 to 130 F).
- Gradually add in to dry ingredients.
- Beat 2 min at medium speed of electric mixer, scraping bowl occasionally.
- Add in Large eggs and 1/2 c. flour.
- Beat 2 min at high speed, scraping bowl occasionally.
- Stir in remaining flour to make stiff batter.
- Spread proportionately in greased 9 inch square pan.
- Arrange apple slices proportionately over batter.
- Sprinkle Crumb Topping over apples.
- Cover; let rise in hot, draft-free place till doubled in size, about 1 hour.
- Bake at 375 F for 35 to 40 min or possibly till done.
- Cold in pan 10 min.
- Remove from pan; cold on wire rack.
- Crumb Topping: Combine 1/3 c. sugar, 1/4 c. all-purpose flour, 1 tsp.
- grnd cinnamon and 3 Tbsp.
- cool butter or possibly margarine.
- Mix till crumbly.
- Makes 1 (9 inch) cake
