Seafood Burritos
- 1 (10 oz.) jar salsa, divided
- 2 tsp. chili powder
- 16 oz. crab meat, flake or chunks
- 1 large tomato, diced
- 1/2 c. finely diced green pepper
- 2 green onions, thinly sliced
- 8 flour tortillas
- 1/2 c. shredded Monterey jack cheese
- 2 c. shredded lettuce
- 8 Tbsp. nonfat sour cream
- In a 1 1/2-quart casserole, mix half of salsa with chili powder, toss with seafood, tomato, bell pepper and green onion. Microwave on High 2 to 3 minutes, set aside.
- Wrap stack of tortillas in damp paper towels.
- Microwave on High for 1 1/2 to 2 minutes.
- Divide seafood mixture among 8 tortillas and sprinkle with cheese.
- Fold bottom of tortilla up to partially cover filling; fold in sides to meet and roll over top to close.
- Place seam-side down in baking dish and microwave 2 to 4 minutes.
- Serve hot with remaining salsa and sour cream.
