Charito's Chipotle Meatballs
- 2 lbs lean ground chuck
- 1 small onion, diced
- 3 garlic cloves, diced
- 15 leaves chopped cilantro
- 1 (8 ounce) can tomato sauce
- 3 teaspoons soy sauce
- 20 saltine crackers, crumbled into bowl
- 2 eggs
- 1 12 teaspoons salt
- 1 teaspoon black pepper
- 1 pinch dried oregano
- 1 pinch of dried pizza seasoning
- 1 (8 ounce) can chipotle peppers
- 1 (6 ounce) can tomato paste
- 1 (11 ounce) can diced tomatoes, including juice
- 12 small onion, cut in half
- 1 12 cups sour cream
- 1 cup water
- 3 garlic cloves
- 1 teaspoon salt
- 1 teaspoon pepper
- 12 cup olive oil
- In a really large bowl combine all of the meatball Ingredients, mix well with your hands.
- Heat olive oil in a large frying pan.
- Make medium size meatballs and add them to the hot pan.
- You will need to make about 3 batches, the good thing about this is all the good stuff that's left on the pan will make the next batch taste even better.
- Fry the meatballs until fully cooked insided, you can test one by cutting it in half to make sure it's been cooked all the way through.
- Place cooked meatballs in a large serving dish and keep frying the rest until all done.
- In a blender combine all the sauce ingredients.
- blend til all ingredients come together.
- heat sauce in a large saucepan and serve over warm meatballs.
- Serve over white rice.
