Sour Cream Apple Pie #2
- 4 each apples cooking, medium-tart
- 1/2 cup brown sugar
- 1 tablespoon lemon juice
- 1 cup sour cream light
- 2 large eggs lightly beaten
- 1/2 tablespoon vanilla extract
- 1 pinch salt
- 1 each pie shell (9 inch) (9-inch), topping
- 1/4 cup butter or margarine, softened
- 1/4 cup sugar
- 1/4 cup almonds sliced
- Preheat oven to 350F (180C).
- Peel and core the apples; thinly slice.
- In a large bowl, combine the apple slices, sugar, lemon juice, sour cream, eggs, vanilla, and salt.
- Mix well and set aside.
- Bake empty pie shell for 5 minutes, then fill with apple mixture and bake for 35 minutes.
- Meanwhile, mix margarine or butter with sugar and almonds until smooth.
- Set aside.
- Remove pie from oven.
- Spread the topping on pie and put back in oven for 20 minutes.
- Remove pie from oven and let cool on rack before serving.
- Makes 8 servings.
