Sauteed Spinach and Garlic

  1. Melt butter in olive oil over medium heat in a large saute pan with a lid.
  2. When foaming subsides, add garlic.
  3. Saute 2 minutes or until edges of garlic slices are barely beginning to brown.
  4. Add spinach and toss to coat.
  5. Cover and cook 3 minutes.
  6. Uncover, stir and toss spinach until wilted, dark, and reduced in volume by 3/4.
