Sauteed Spinach and Garlic
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 garlic cloves, sliced thin
- 34 lb spinach leaves, washed and drained
- Melt butter in olive oil over medium heat in a large saute pan with a lid.
- When foaming subsides, add garlic.
- Saute 2 minutes or until edges of garlic slices are barely beginning to brown.
- Add spinach and toss to coat.
- Cover and cook 3 minutes.
- Uncover, stir and toss spinach until wilted, dark, and reduced in volume by 3/4.
