Aussie Style Seafood Pasta Salad
- 250 g pasta, pre cooked (any shape will do, macaroni, penne etc)
- 2 tablespoons oil (I like olive)
- 500 g good quality fresh mixed seafood (called a Marinara mix in Australia)
- 250 g cherry tomatoes, halved
- 12 kalamata olives, sliced
- 4 spring onions, sliced
- 2 tablespoons white balsamic vinegar
- 1 tablespoon tomato paste
- 14 cup good quality olive oil
- 14 cup Italian salad dressing
- 14 cup chopped parsley
- Place the oil in a non stick fry pan (or Wok) and heat the oil.
- Add the seafood mix and cook over a medium heat until the seafood changes colour.
- In a large bowl add the cooked pasta shapes and the cooked seafood mix.
- Add the cherry tomatoes, olives and spring onions.
- In a bowl whisk together the vinegar, oil, salad dressing tomato paste and parsley.
- Pour over the pasta mix and stir well.
- Place in the fridge to chill for atleast an hour.
