Fresh Fruit Cake

  1. Puree the oranges in a blender or food processor until the rind is finely chopped.
  2. Reserve.
  3. Mash the bananas; dice the apples into small pieces.
  4. Beat eggs in a large bowl.
  5. Gradually beat in sugar until mixture is thick and pale.
  6. Beat in melted butter or margarine, then fold in oranges and bananas.
  7. In a second bowl, stir together flour, baking powder and soda.
  8. Beat into the fruit mixture, then stir in the apples, raisins and walnuts.
  9. Pour batter into greased and floured loaf pans.
  10. Bake in a 350u0b0 oven for 1 hour, or until it tests done with a toothpick. If desired, garnish with cherries.
