Fresh Fruit Cake
- 2 oranges (including rind), seeded and cut into quarters
- 2 ripe bananas, peeled and cut into pieces
- 2 apples, cored and cut into quarters
- 2 eggs
- 1 1/2 c. sugar
- 1/2 c. butter or margarine, melted
- 3 c. flour
- 1 Tbsp. baking powder
- 2 tsp. soda
- 1/2 c. raisins
- 1/2 c. coarsely chopped walnuts
- candied cherries, cut in half (for garnish)
- Puree the oranges in a blender or food processor until the rind is finely chopped.
- Reserve.
- Mash the bananas; dice the apples into small pieces.
- Beat eggs in a large bowl.
- Gradually beat in sugar until mixture is thick and pale.
- Beat in melted butter or margarine, then fold in oranges and bananas.
- In a second bowl, stir together flour, baking powder and soda.
- Beat into the fruit mixture, then stir in the apples, raisins and walnuts.
- Pour batter into greased and floured loaf pans.
- Bake in a 350u0b0 oven for 1 hour, or until it tests done with a toothpick. If desired, garnish with cherries.
