Belgian Christmas Almond Spice Bread
- 4 cups sifted flour
- 7/8 tsp. scant baking powder
- 1 tsp. cinnamon
- 1 dash salt
- 1-3/4 cup blanched almonds, grated
- 1 cup 2 plus tbsp. firmly packed light brown sugar
- 1/4 cup brandy
- 1/2 cup milk
- 3/4 cup unsalted butter, melted
- Sift flour with baking powder, cinnamon and salt.
- Stir in almonds and sugar.
- Combine brandy, milk and butter, and stir into flour mixture.
- Add more flour if necessary to give a dough that will pack together firmly.
- Press into a roll, wrap in waxed paper and chill overnight.
- Cut into 1/2-inch-thick slices.
- Arrange on a lightly buttered cookie sheet.
- Bake in preheated 375 degrees F. oven for 10 minutes.
- Cool on a rack.
