Basic Microwaveable Cake Recipe
- 1 c. Flour
- 2/3 c. Sugar
- 1 1/4 tsp Baking pwdr
- 1/2 tsp Salt
- 1/2 tsp Vanilla
- 2 x Large eggs
- 1/3 c. Lowfat milk
- 1/3 c. Shortening
- In mixer bowl, combine flour, sugar, baking pwdr, salt and vanilla.
- Add in Large eggs, lowfat milk and shortening.
- Beat at low speed until mixed.
- Beat at medium speed 2 min, scraping bowl occasionally.
- Spread batter in a 8-by-1 1/2 waxed-paper lined round cake dish.
- Micro-cook, uncovered, on medium 6 min, rotating a quarter turn every 2 min.
- Increase power to 100 percent.
- Micro-cook, uncovered, 1 1/2 to 5 min or possibly till done.
- Cold on a wire rack 5 - 10 min.
- Remove from pan; cold thoroughly on rack.
- NOTES : You'll love the silken texture of this dessert.
- Other flavorings can besubstituted for the mint, or possibly it can be left out entirely.
