Cajun Hot Pot
- 3 lb Red skin potatoes, cubed
- 1 lb Andouille or smoked sausage, sliced
- 1 lb Cabbage, sliced
- 1 small Onion, diced
- 1 each Green pepper, diced
- 1 can Vegetable or chicken broth, 14.5 ounces
- 1 cup Water
- 4 clove Garlic, minced
- 1 tbsp Cajun seasoning
- 1 tsp Salt
- 1 tsp Smoked paprika
- Mix liquids and spices in a large pot
- Add potatoes, sausage, onions and peppers.
- Stir well
- Cook uncovered on medium high heat for 10 minutes.
- Pot should be boiling and allowing liquids to evaporate as it cooks.
- Add cabbage, stirring gently and cook another 10-20 minutes until potatoes are tender and most of the liquid is evaporated.
- Stir once or twice.
