Mallorca Lukewarm Ray Salad
- 1 lb. skate
- 1 qt. fish stock
- 1/2 onion
- 3 oz. sliced almonds
- 3 oz. butter
- 1-1/2 tbsp. vinegar
- 1/2 oz. chopped parsley
- Salt and pepper
- 1 lb. assorted lettuce
- Cherry tomato and parsley, for garnish
- Cook the skate in the fish stock for 20 minutes.
- Prepare 4 plates with salad in a vinaigrette dressing.
- Remove the skate and flake.
- Divide the fish among the plates, placing it on top of the salad.
- Heat the butter in a frying pan, and add the half onion, chopped.
- Saute until it begins to take colour.
- Add the sliced almonds, parsley, salt, and pepper.
- When it is ready, pour the vinegar on.
- Spoon this sauce over the skate on each plate and serve.
