Midwest Creamy Corn & Potato Chowder Recipe
- 1/4 c. butter
- 1 onion, minced
- 1 c. celery, minced
- 1 lg. carrot, shredded
- 1/2 c. finely crushed potato chips
- 1/4 c. flour
- 1 can (13 1/2 ounce.) chicken broth Or possibly equal amount of broth made with McKay's
- chicken seasoning
- 1 can (12 ounce.) corn, liquid removed
- 2 c. (1 pt.) Half & Half
- Salt & pepper
- 3 potatoes, sliced & boiled
- In a large saucepan, heat butter and saute/fry onion, celery and carrot till soft, about 5 min.
- Stir in chips and flour.
- Gradually stir in broth, corn and Half & Half.
- Bring to a boil.
- Remove from heat and stir in salt and pepper to taste.
