Tasty Shrimp, Asparagus, and Linguini Dinner
- 8 ounces linguine
- 34 cup extra virgin olive oil
- 1 12 lbs large shrimp, peeled and deveined (20-25 pieces)
- 1 bunch asparagus, chopped into 1/2 inch pieces
- all-purpose seasoning, to taste
- 2 garlic cloves, minced in press
- 2 teaspoons finely chopped fresh cilantro
- 1 teaspoon dried thyme
- 1 teaspoon lemon zest, which is the grated peel
- 2 tablespoons lemon juice
- 2 tablespoons grated parmesan cheese
- Bring water to boil in large pot & cook linguini according to package directions.
- Drain pasta & set aside in same pot.
- Meanwhile, heat oil in medium saucepan over low heat until warm.
- Season shrimp with your favorite all-purpose or seafood seasoning.
- Add shrimp, chopped asparagus, garlic, thyme and cilantro, stirring to coat shrimp in oil.
- Cook, stirring occasionally, until garlic begins to brown and shrimp becomes opaque pink, 8-10 minutes.
- Remove pot from heat.
- Stir in lemon juice and zest.
- Move pot with reserved linguini to low heat.
- Add shrimp & asparagus combo, stirring until all ingredients are well mixed.
- Remove pot from heat & stir in parmasaen cheese.
- Serve while warm.
