Quick and Healthy Potato Salad

  1. Place whole potatoes in oven at 425F and bake for 30 minutes.
  2. Remove from oven and allow potatoes to cool.
  3. Cut potatoes into bite-size pieces.
  4. Place in a large bowl with remaining ingredients.
  5. Stir well to mix.
