Smashed Potatoes
- 2 -4 teaspoons minced garlic
- 3 tablespoons olive oil
- 3 lbs gourmet baby red potatoes
- 12 cup light cream
- 14 cup butter
- 2 -3 tablespoons chives
- salt & pepper (coarse salt & fresh ground pepper are best)
- Quarter unpeeled potatoes and cook in salted boiling water until tender (about 15-20 minutes).
- Drain.
- Add rest of ingredients.
- Smash.
