Apple & Fennel Salad
- 1 whole Golden Delicious Apple, Sliced
- 1 whole Lemon, Juiced
- 1 whole Fennel Bulb, Sliced
- 1 Tablespoon Fennel Fronds, Chopped
- 1 sprig Mint, Chopped
- 1 Tablespoon Olive Oil
- Salt And Pepper, to taste
- Core apple and thinly slice.
- I use a mandoline, but you could use a chefs knife if you dont have a mandoline.
- Juice the lemon.
- Toss the apple slices with the lemon juice immediately to prevent browning.
- Slice fennel bulb thinly.
- Reserve a few fennel fronds (the thin green leaves) and chop.
- Chop the mint leaves.
- Toss all of the ingredients together with the oil in a large bowl.
- Season with salt and pepper to taste.
- Serve immediately or refrigerate until serving.
- This salad is light and refreshing.
- Serve with grilled fish or chicken and a glass of white wine!
