Apple & Fennel Salad

  1. Core apple and thinly slice.
  2. I use a mandoline, but you could use a chefs knife if you dont have a mandoline.
  3. Juice the lemon.
  4. Toss the apple slices with the lemon juice immediately to prevent browning.
  5. Slice fennel bulb thinly.
  6. Reserve a few fennel fronds (the thin green leaves) and chop.
  7. Chop the mint leaves.
  8. Toss all of the ingredients together with the oil in a large bowl.
  9. Season with salt and pepper to taste.
  10. Serve immediately or refrigerate until serving.
  11. This salad is light and refreshing.
  12. Serve with grilled fish or chicken and a glass of white wine!
  13. Enjoy!
