Easy Vegetable Gumbo
- 3 tablespoons vegetable oil
- 3 tablespoons flour, all-purpose
- 1 onions
- 1 sweet bell peppers
- 2 celery stalks
- 1 carrots
- 3 cloves garlic
- 1 tablespoon soy sauce, tamari or Worcester
- 1 teaspoon paprika
- 2 cups chicken broth
- 1 pound kale
- 1 can black-eyed peas
- Make roux.
- Add vegetables.
- Add soy, paprika, and broth.
- Add kale and let simmer for 15 minutes.
