Soft Apple Bars
- 2 whole Apples (peeled And Chopped)
- 1/4 teaspoons Cinnamon
- 2 Tablespoons Brown Sugar
- 1 pinch Salt
- 1/4 cups Canola Oil
- 1/4 cups Honey
- 1 teaspoon Molasses
- 1/2 teaspoons Vanilla Extract
- 1 whole Apple, Peeled And Grated
- 18 teaspoons Ground Nutmeg
- 2- 1/4 cups Barley Flour
- 1/2 teaspoons Baking Soda
- For the filling: Place the ingredients in a small saucepan.
- Cook over low heat until the apples begin to soften and they have released their juices, about 20 minutes.
- Once the apples are cooked, place the mixture in a food processor and finely chop up the apples.
- Set the mixture aside.
- For the dough: Preheat the oven to 350 degrees F.
- Combine the oil, honey, molasses, vanilla, and apple in a medium bowl.
- Add the nutmeg, flour, and baking soda and stir to combine.
- Roll the dough out to about 1/8 inch thick and cut out squares using a 3-inch square cookie cutter.
- You should be able to cut out about 18 squares.
- Place 9 of the squares on a baking sheet covered in parchment paper and spread the apple filling on each one.
- About 1 tablespoon of filling will probably be what you need for each bar.
- Place the remaining 9 squares on top of the bottom squares, 1 for each.
- Using a fork, gently press down the edges all the way around each bar.
- You dont need to press all the way as you would with a hand pie, just a light press.
- Bake the bars for 15 minutes, or until golden around the edges.
- Let cool on a baking rack.
