Soft Apple Bars

  1. For the filling: Place the ingredients in a small saucepan.
  2. Cook over low heat until the apples begin to soften and they have released their juices, about 20 minutes.
  3. Once the apples are cooked, place the mixture in a food processor and finely chop up the apples.
  4. Set the mixture aside.
  5. For the dough: Preheat the oven to 350 degrees F.
  6. Combine the oil, honey, molasses, vanilla, and apple in a medium bowl.
  7. Add the nutmeg, flour, and baking soda and stir to combine.
  8. Roll the dough out to about 1/8 inch thick and cut out squares using a 3-inch square cookie cutter.
  9. You should be able to cut out about 18 squares.
  10. Place 9 of the squares on a baking sheet covered in parchment paper and spread the apple filling on each one.
  11. About 1 tablespoon of filling will probably be what you need for each bar.
  12. Place the remaining 9 squares on top of the bottom squares, 1 for each.
  13. Using a fork, gently press down the edges all the way around each bar.
  14. You dont need to press all the way as you would with a hand pie, just a light press.
  15. Bake the bars for 15 minutes, or until golden around the edges.
  16. Let cool on a baking rack.
  17. Enjoy!
