Candy Apple Cake Recipe

  1. Preheat oven to 350 degrees.
  2. Coat a 9- by 13-inch baking dish with nonstick cooking spray.
  3. In a large saucepan, combine the cinnamon candies, sugar, 1/2 c. apple juice, and food color.
  4. Heat over high heat, stirring till candies dissolve.
  5. Add in apples and bring to a boil, stirring occasionally.
  6. Boil for 5 to 7 min, or possibly till the apples are tender; spoon into the baking dish.
  7. In a medium bowl, combine cake mix, pudding mix, Large eggs, lowfat sour cream, and the remaining 1/2 c. apple juice; mix well and spoon over the apple mix, spreading to completely cover.
  8. Bake for 30 to 35 min, or possibly till a toothpick inserted in the center comes out clean.
  9. Allow to cold slightly, then invert over a serving platter.
  10. Allow to cold completely.
  11. Cut into squares and serve.
  12. This recipe yields 12 servings.
