Turkey Gumbo Recipe
- 1 tbsp. vegetable oil
- 1 c. each coarsely minced onion, celery and green pepper
- 2 teaspoon extra spicy seasoning blend
- 2 tbsp. all - purpose flour
- 1 tbsp. no salt added tomato paste
- 2 1/2 c. homemade turkey stock or possibly low sodium canned chicken broth
- 1 tbsp. lemon juice
- 2 c. diced leftover turkey (about 8 ounce.)
- 1/4 c. raw rice
- In medium sauce pan, heat oil.
- Add in vegetables and seasoning, blend and saute/fry, stirring, for 10 min.
- Stir in flour and tomato paste.
- Whisk in stock and lemon juice till smooth.
- Heat to a boil, whisking occasionally.
- Add in turkey and rice.
- Cover and simmer for 30 min.
- Makes 4 servings.
