Baked Ricotta Rolls
- 4 bread rolls, round ones
- 1 cup ricotta cheese
- 12 cup grated parmesan cheese
- 1 garlic clove, crushed
- 1 egg, lightly beaten
- 12 cup sun-dried tomato, drained, chopped
- 12 cup olive, pitted, diced
- 100 g eggplants, slices bottled, char grilled
- 8 large fresh basil leaves
- Cut "lids" from bread rolls.
- Remove bread from inside rolls, leave 1 cm shell.
- Combine cheeses, garlic, egg, tomatoes and olives in a bowl.
- Place eggplant slices in base of rolls.
- Top with basil leaves.
- and then top with ricotta mixture.
- Replace lids, wrap rolls in foil.
- Bake in very hot oven for 15 mins until heated through.
