Scicilian Panelle Special
- 1 cup chickpea flour
- 1 1/2 cup water
- 1 pinch salt
- 1 pinch black pepper
- 1 lb fresh ricotta cheese
- 1 cup shredded pecorino romano cheese
- 4 fresh bread rolls
- In pot add chickpea flour & water and pinch of salt & wisk well
- put on medium flame & continue wisking...do not stop until batter thickens
- once batter thickens remove from flame & spread on wet marble or formica top...spread out evenly to a 1/4 inch thickness ..try to make a square
- when batter cools cut into squares the size of your rolls
- fry the patties in a frying pan with the oil of your choice until golden brown on both sides..u will have to flip them in frying pan
- remove & set aside to cool some
- cut roll in half & put 3 panelle patties on roll...add generous scoop of fresh ricotta on top of patties & sprinkle shredded cheese on top of ricotta
- bake sandwich in oven until cheese melts & bread is lil toasty
- eat & enjoy
