Scicilian Panelle Special

  1. In pot add chickpea flour & water and pinch of salt & wisk well
  2. put on medium flame & continue wisking...do not stop until batter thickens
  3. once batter thickens remove from flame & spread on wet marble or formica top...spread out evenly to a 1/4 inch thickness ..try to make a square
  4. when batter cools cut into squares the size of your rolls
  5. fry the patties in a frying pan with the oil of your choice until golden brown on both sides..u will have to flip them in frying pan
  6. remove & set aside to cool some
  7. cut roll in half & put 3 panelle patties on roll...add generous scoop of fresh ricotta on top of patties & sprinkle shredded cheese on top of ricotta
  8. bake sandwich in oven until cheese melts & bread is lil toasty
  9. eat & enjoy
