Cheesy Cauliflower Bake
- 8 cups small cauliflower florets, cooked Safeway 1 lb For $1.99 thru 02/09
- 2 Tbsp. non-hydrogenated margarine
- 1 onion, chopped
- 2 Tbsp. flour
- 1 Tbsp. dry mustard
- 2 tsp. Lea & Perrins Worcestershire Sauce
- 2 cups skim milk
- 1-1/3 cups Cracker Barrel Shredded Light Double Cheddar Cheese, divided
- 1 pkg. (120 g) Stove Top Lower Sodium Stuffing Mix for Chicken
- Place cauliflower in 13x9-inch baking dish sprayed with cooking spray.
- Melt margarine in medium saucepan on medium heat.
- Add onions; cook and stir 3 min.
- or until crisp-tender.
- Stir in next 3 ingredients.
- Gradually whisk in milk.
- Bring to boil; cook and stir 2 min.
- or until thickened.
- Add 1 cup cheese; cook 2 to 3 min.
- or until melted, stirring constantly.
- Pour over cauliflower.
- Heat oven to 350 degrees F. Prepare stuffing as directed on package, omitting margarine.
- Stir in remaining cheese; spoon over cauliflower mixture.
- Bake 30 min.
- or until casserole is heated through and top is golden brown.
