Moroccan Tomato Soup
- 2 onions, chopped
- 2 clove garlic, chopped
- 2 tbsp packed brown sugar
- 2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp pepper
- 1/4 tsp salt
- 1/4 tsp cayenne pepper
- 1 pinch cinnamon
- 1 can (28) oz. chopped tomatoes
- 2 cup water
- 1/4 cup tomato paste
- 1 tbsp red wine vinegar
- 3/4 cup smooth peanut butter
- In a slow cooker combine onions, sugar, garlic, chili powder, cumin, pepper, salt, cayenne and cinnamon.
- Stir in tomatoes, water, paste and vinegar.
- Cook on low for 5 to 8 hours.
- Add peanut butter, using immersion blender, puree until smooth.
